Recipe Description

Properly styled the Queen Califa Cocktail, this drink screams Christmas with one of my favorite liqueurs, Velvet Falernum straight from Barbados, and St. Elizabeth Allspice Dram, a Jamaican liqueur that is an indispensable go-to for winter drinks, so I had to rename it for inclusion in my 12 Cocktails of Christmas! It’s also a fantastic opportunity to use agricole rhum straight from Martinique – it’s not rum like you’ve had before (unless you’ve actually had it before!)

Ingredients

  • 1.5 ounces Agricole Rhum
    You can use silver rum but this cocktail is designed around the unique and sophisticated flavors of agricole rhum....the recipe originally called for St George California Agricole Rum but they no longer produce it. I used Rhum Clement Rum Premiere Canne and it was sublime.
  • 1 ounce pineapple juice
  • 1/2 ounce Velvet Falernum
  • 1/4 ounce St Elizabeth Allspice Dram
  • 1 egg white
  • 1 mint sprig

Preparation

Put a coupe in the freezer.

Combine all ingredients except mint in a shaker and shake vigorously until egg whites are frothy.

Add ice. Shake vigorously until drink is cold.

Service

Strain cocktail into chilled glass, rub mint around rim and use as garnish.
