Rum Sour

Recipe Description

Rum, lime, sugar…a daiquiri pure and simple is the best way to use a really good white (or coconut!!) rum…see my recipes here. I had no idea, however, that an older rum would taste so darned good in a classic sour preparation–thank you saltpepperskillet for the inspiration! I swapped out their promoted rum, however, for Havana Club Anejo 3 Anos and it sure was the right choice! I woke up thinking about this drink (don’t be alarmed–this doesn’t happen too often!)

Ingredients

  • 2 ounces Havana Club Anejo 3 Anos Rum
  • 3/4 ounce fresh lemon juice
  • 3/4 ounce simple syrup
    made from white granulated or demerara (turbinado or raw) sugar
  • 1 egg white
  • 2-3 drops Angustora bitters
    for garnish

Preparation

Put a sour glass in the freezer.

Combine all ingredients except bitters in shaker and shake WITHOUT ICE. (Your shaker might feel like exploding after this – be careful when opening!)

Add ice. Shake until cold.

Service

Strain drink into cold glass. Top with drops of bitters.
