As you may know, I’m not one for ice and bubbles in my cocktails, but oftentimes bubbles without ice are there for a very good reason. In this case, the zingy effervescence accentuates the spicy undertones of the drink to marvelous effect!
This drink makes four cocktails at once so it’s great to start off an evening cooking out with friends.
*Modified from the original recipe here.
- 1 cup London Dry or Plymouth Gin
- 1/2 cup ginger-rosemary simple syrup
1/2 cup sparkling water
I prefer Topo Chico or Fever Tree
- 1/2 cup fresh lime juice
Combine gin, syrup and lime in a cocktail shaker with ice. Shake thoroughly. Strain. Add sparkling water, stir briefly. Pour into chilled glasses.
